Fried Champignons with Green Beans and Croutons

Try this quick and easy recipe, which combines croutons, mushrooms, green beans, and fresh tomatoes.You can easily prepare the beans and the different pieces ahead of time and just sauté it all together just before serving.


4 slices of white bread
2 large onions
3 cloves of garlic
Olive oil to taste
600 g champignons
Juice of half a lemon
1/2 tsp dried oregano
400 g frozen green beans
200 g cherry tomatoes
Salt to taste
Freshly ground black pepper


1.Cut bread into small cubes and fry in the oven or in a skillet without oil until crispy.

2.Peel onions and garlic. Grate garlic on a fine grater. Combine with 4 tablespoons of olive oil. Season with salt. Pour over croutons.

3.Cut onion into large pieces.

4.Wipe champignons with a napkin. Cut off stipes. Cut mushrooms into quarters and pour over with lemon juice.

5.Heat oil in a deep frying pan. Sauté onion for 5 minutes. Add mushrooms and fry over high heat, stirring constantly, for 5-7 minutes.

6.Sprinkle with oregano. Add frozen beans. Sauté over high heat for another 5-7 minutes. Turn off the heat. Sprinkle with salt and pepper. Cover with the lid and let it brew for 3-4 minutes.

7.Add croutons and halved cherries. Stir and serve immediately.
