Squid stuffed with cheese will allow you to take a virtual trip to the picturesque Greek islands and thus get the most wonderful emotions from its nature and great cuisine without leaving your home. This dish combines the aromas of the sea, vegetables, herbs and spices.
Ingredients
4 green onion feathers
1 small fennel
1 red bell pepper
1 tsp smoked paprika
1 pinch of chili flakes
700 g small squid
1/4 cup olive oil
3 oz Gouda cheese
Salt to taste
Pepper to taste
For the sauce:
1/2 tsp Dijon mustard
3 tbsp lemon juice
1/4 cup olive oil
2 sprigs of parsley
Preparation
1.Chop green onion finely. Cut fennel and bell peppers into small cubes. Heat olive oil in a skillet and sauté bell peppers, fennel and green onions until soft, 5-7 minutes. Add smoked paprika and chili. Season with salt and pepper. Remove from heat and cool.
2.Peel squid.
3.For the sauce, combine mustard, lemon juice and olive oil. Season with salt and pepper. Add finely chopped parsley.
4.Cut cheese into small cubes and combine with cool vegetables. Stuff squid with the filling. Pin with skewers. Salt.
5.Preheat a grill pan and brush with olive oil. Fry squid for 2 minutes on each side until done.
6.Transfer cheese-stuffed squid to a plate and top with the sauce. Serve with lemon wedges.
