Garlic Mashed Potatoes

Instead of mashed potatoes, you can use cauliflower with the same ingredients.


3 lbs mashed potatoes
1 cup fat heavy cream
8 tbsp butter
2 egg yolks
2 garlic bulbs
Salt to taste
1 pinch of nutmeg


  1. Cut garlic in half crosswise, wrap in foil and bake in the oven at 390° F (200° C) for 30 minutes.
  2. Peel potatoes, cut into quarters, put in a saucepan and pour boiling water over 3/4 of potatoes. Place over high heat, bring to a boil, season with salt, cover, reduce heat and simmer until completely soft, about 25 minutes.
  3. Drain the water. Heat heavy cream with butter and nutmeg until butter melts.
  4. While mashing potatoes, add garlic, then yolks and gradually the creamy mixture. Blend until smooth and serve immediately.
