Instead of mashed potatoes, you can use cauliflower with the same ingredients.
3 lbs mashed potatoes
1 cup fat heavy cream
8 tbsp butter
2 egg yolks
2 garlic bulbs
Salt to taste
1 pinch of nutmeg
- Cut garlic in half crosswise, wrap in foil and bake in the oven at 390° F (200° C) for 30 minutes.
- Peel potatoes, cut into quarters, put in a saucepan and pour boiling water over 3/4 of potatoes. Place over high heat, bring to a boil, season with salt, cover, reduce heat and simmer until completely soft, about 25 minutes.
- Drain the water. Heat heavy cream with butter and nutmeg until butter melts.
- While mashing potatoes, add garlic, then yolks and gradually the creamy mixture. Blend until smooth and serve immediately.
