This recipe brings a light flavor and is super-easy and fast to make!
900 g salmon fillet or any red fish
1 cup coarse sea salt
2 cups dark cane sugar
4 pcs anise
1 tsp coriander
3 orange zest
1 lime zest
1 lemon zest
1.Put everything except fish fillet in a blender and blend until smooth.
2.Line a cutting board with cling film so that the edges hang down on the sides.
3.Spread 1/3 of the citrus marinade over the cling film and lay the salmon skin side down on it. Top with the rest of the mixture.
4.Wrap the fish well in foil. Place another board and a light weight on top and refrigerate fish for 12 hours.
5.Before serving, wash fish and dry it thoroughly. Cut into thin slices.
