4 large squid pcs
1 garlic clove
3-4 sprigs of parsley
1 red chili
Ground black pepper to taste
Salt to taste
1.Defrost squid and remove the chitinous plate and entrails. Pour boiling water over the squid and immediately put into cold water. Carefully remove the skin from the outside and inside. Insert a long wooden spoon or spatula handle into squid. With a very sharp knife, make transverse cuts on squid. Remove the spoon, rinse squid and dry with paper towels.
2.Chop garlic. Remove seeds from chili, finely chop. Squeeze out the juice from half a lemon, cut the remaining lemon into slices. Pour olive oil into a bowl, add lemon juice, garlic, chili, salt and pepper and stir. Put squid in the resulting marinade and turn over several times. Put aside to marinate for 10 minutes.
3.Preheat the grill. Arrange squid on the wire rack and cook for 2-3 minutes. Turn over to the other side and cook for 2 more minutes. Sprinkle with finely chopped parsley and serve hot with white bread.
