Salad with Grilled Chicken and Grapes

Spread the love

If salad is something of your go to meals, then you already know that adding a protein like chicken, makes your salad filling enough to count as the main course rather than a side dish. Grapes and grilled chicken are the brilliant match and let’s not forget about a rich herbed flavor from the thyme. And in less than 20 minutes, you get this healthy and satisfying meal on your table.

  • 3 oz salad mix
  • ¾ lb boneless skinless chicken breast
  • 2 cups red grapes
  • ½ cup walnuts
  • ½ red sweet onion
  • 1 ½ oz feta
  • ½ tsp dried thyme
  • 1 tbsp olive oil
  • Salt
  • Black pepper

For dressing

  • 1/3 cup olive oil

  • Black pepper

  1. Brush chicken with olive oil, sprinkle with thyme and season with salt and pepper.
  2. Preheat grill or grill pan to medium high. Brush with oil. Grill chicken 2–3 minutes per side. Remove from grill and set aside. Then cut into thin slices.
