Salmon with Citrus Sauce

These baked salmon fillets are accompanied by a tasty combination of orange and lemon juice.

Ingredients

  • 4 pieces of salmon fillet
  • 600 g broccoli
  • Juice of 1/2 lemon
  • Olive oil to taste
  • Salt to taste
  • Freshly ground black pepper to taste
  • Chives for serving

For the sauce:

  • 2 yolks
  • 185 g butter
  • Juice of 1/2 lemon
  • Zest of 1 orange
  • 1 pinch of cayenne pepper
  • Salt to taste

Preparation

  1. Cut butter into cubes. Place in a saucepan and melt over medium heat. Cool slightly.
  2. Grate orange zest on a fine grater.
  3. Preheat the oven to 360° F (180° C). Cover a baking sheet with baking paper. Place salmon slices on the baking sheet. Season with salt and pepper. Drizzle with lemon juice and olive oil. Place in the oven and bake for 10 minutes.
  4. Cut broccoli into small florets. Put in boiling salted water. Cook for 5 minutes (broccoli should be slightly crispy). Put broccoli in a colander, keep warm.
  5. Put a saucepan with water on the fire and bring to a boil. Place a steel or glass bowl on the saucepan so that the water does not touch the bottom of the bowl. Put yolks and a pinch of salt in the bowl and beat up with a whisk or an electric mixer.
  6. Pour melted butter into yolks while beating until the sauce thickens. Add lemon juice, orange zest and cayenne pepper, and mix. Remove sauce from the water bath and keep warm.
  7. Arrange salmon and broccoli on plates. Top with the sauce. Sprinkle with chopped chives.
