A fast and easy dinner that’s cooked in 20 minutes! This garlic shrimp tortellini is that delicious one that tastes as perfect as a dinner at a restaurant and is so easy to prepare!
Ingredients
3 large eggs
1 pinch of salt
1 1/2 cup boiled shrimp
3/4 cup pitted olives
3 oz cheese
1/2 tsp dried thyme
2 tbsp olive oil
2 cups flour
For the sauce:
3 cloves of garlic
1 bunch of green onion
1/2 zucchini
10 cherry tomatoes
2 tsp butter
4 tbsp olive oil
Preparation
1.Sift flour. Add eggs, olive oil, salt and knead the dough until smooth and elastic. Wrap the dough with foil.
2.Finely chop shrimps and olives with a knife.
3.Grate cheese.
4.Combine shrimp with olives and cheese. Add thyme.
5.Roll out the dough into a very thin layer. Using a wine glass, cut out circles. Put 1 teaspoon of filling in the center of each circle.
6.Lubricate the edges of circles with water or an egg and fold them so that you get a semicircle.
7.Join the opposite ends of each semicircle and press.
8.Boil water in a large saucepan. Add salt. Cook tortellini for 10 minutes.
9.Peel garlic and zucchini. Chop garlic, cut zucchini into half rings. Wash tomatoes and cut them in half. Wash onion, dry it and chop finely. Heat vegetable oil in a frying pan. Fry garlic for 20 seconds. Add zucchini, tomatoes and onions. Cook for 2 minutes.
10.Add tortellini. Cook for 3 minutes. Add butter, stir and serve.
