1/2 cup flour
4 tbsp sour cream
3 tbsp olive oil
4 tbsp natural tomato puree
4 oz mozzarella
3 tbsp grated parmesan
2 sprigs of basil
Freshly ground black pepper
1.Combine sour cream, egg, 1 table spoon of olive oil and salt. Mix with a whisk. Add flour, mix again. You should have liquid dough.
2.Slice mozzarella and tomatoes into thin rounds. Separate basil leaves from the stems, finely chop half.
3.In a large non-stick skillet, heat 1 tablespoon of olive oil, pour in dough and smooth with a silicone spatula. Cover the skillet with a lid and cook for 1 minute over low heat.
4.Spread tomato puree on dough, sprinkle with basil, spread mozzarella and tomatoes, sprinkle with parmesan. Bake pizza covered for 20 minutes. Transfer carefully to a wooden board, drizzle with remaining olive oil, sprinkle with pepper and garnish with basil leaves.
