Shortbread with Avocado

By adding avocados instead of butter, you’re getting up to 20 vitamins and minerals in your dessert. Moreover, you reduce the amount of saturated fat—almost by 75 percent! As you know, avocados are rich in water, so using them in your recipes, you will always have soft and chewy cookies instead of dry and crumbly!


  • 1 cup flour
  • 4 tbsp sugar
  • 1/2 cup avocado puree
  • Seeds, nuts, poppy seeds to taste


  1. In a bowl, combine all ingredients and 1/2 cup of water.
  2. Knead the tough dough. Cut into 12-15 equal parts. Roll out each part into small balls and form a round cookie. Press each one with your palm.
  3. Place cookies on a baking sheet covered with baking paper. Bake in the oven at 320° F (160° C) for 20-25 minutes. Let them cool completely and remove from the paper.
