Bang Bang Turkey

In this recipe, Thanksgiving leftovers meet the East. A quickly assembled salad, this is no more than shredded turkey alongside a satay-esque sauce made of peanut butter, Chinese vinegar, chile bean, with some chopped cucumbers and shredded lettuce. Hard not to scoff down, and fabulously easy to make too!

Ingredients

For the Bang Bang sauce:

  • 2 tablespoons peanut oil
  • 2 teaspoons sesame oil
  • 3 tablespoons peanut butter (smooth)
  • 2 tablespoons Chinese chili-bean sauce
  • 1 tablespoon sugar (superfine)
  • 1 tablespoon soy sauce
  • 1 ½ tablespoons Chinese black vinegar

For assembly:

  • 6 cups lettuce (finely shredded)
  • ½ cup fresh cilantro leaves (chopped)
  • ½ cup fresh mint leaves (chopped)
  • 3 cups cold shredded turkey
  • 1 scallion, (halve cross wise, and julienne
  • 1 small cucumber, (peel, seed, and julienne)

Preparation

Prepare sauce:

  1. Take a small mixing bowl and add your sauce ingredients along with 2 tablespoons cold water. Combine & mix until smooth. Cover before refrigerating until required (no more than 2 weeks).

For assembly:

  1. On a large serving plate, spread out your lettuce. Sprinkle uniformly with mint & cilantro. Drizzle with 4-5 tablespoons of your Bang Bang sauce.
  2. Combine your turkey & 4 tablespoon of Bang Bang sauce in a small bowl – toss until fully covered. Place the turkey strips in a ling down the middle of the salad, before topping with your cucumber and scallions. Either drizzle more of your Bang Bang sauce on top, or place the remainder in a sauce bowl and place on table.
