Brie and nut salad with apples

This apple brie salad combines the crispness of apples and sweetness of caramelized nuts with the creaminess of Brie cheese in one bowl! This salad is loaded with vibrant colors and plenty of different flavors and textures.


For dressing:

  • 3 tbsp white wine vinegar
  • 2 tbsp honey
  • 1 tbsp mustard
  • 4 tbsp olive oil
  • Salt
  • Freshly ground black pepper

For caramelized nuts:

  • 1/3 cup walnuts
  • 1 tbsp honey
  • Olive oil
  • Salt to taste

For salad:

  • 1 head of romaine lettuce
  • 1 red apple
  • 3 ½ oz brie cheese
  • 4 tbsp raisins



  1. Preheat a dry skillet over high heat, add nuts, a pinch of salt and honey. Cook nuts on medium heat for about 3 minutes, stirring constantly, until nuts are caramelized.
  2. Spread nuts on an oiled baking sheet. Make sure nuts don’t stick. Cool completely.
  3. Combine all the ingredients for dressing in a jar or a bottle. Shake until smooth. Put aside.
  4. Cut apple and brie into medium cubes.
  5. Tear lettuce with hands. Put in a bowl. Add apple, cheese, raisins and nuts. Pour over with salad dressing.
