Charlotte with Plums

This charlotte recipe is a speedy dessert. The dough does not require special attention. The plums make it juicy and delicious and bake up beautifully – even the sourest ones turn jammy and sweet in the oven.


  • 400 g plums
  • 10 tbsp butter
  • 1/2 cup flour
  • 1 tsp baking powder
  • 1/2 cup sugar
  • 3 eggs
  • 2 tbsp sour cream
  • 1 pinch of salt
  • 1 sprig of rosemary


  1. Beat butter and sugar with a mixer until white. Add flour, baking powder. Continue beating, while adding an egg by egg. Add sour cream, salt and rosemary.
  2. Cut plums in half. Brush the baking dish with butter. Pour in the dough and spread plum halves. Bake in the oven preheated to 400° F (200° C) for 30–40 minutes.
