Chocolate mousse is a sweet tooth’s dream. Add coffee and spices to this dessert – cinnamon and cardamom, and we get the dream of any gourmet. Chocolate coffee mousse is an elegant dessert for a cup of coffee with your loved one.
100 g dark chocolate (70% cocoa)
3 tbsp sugar
1/2 cup heavy cream
2 tbsp butter
1/3 tsp cardamom
2 tsp instant coffee or finely ground natural coffee
1 tsp ground cinnamon
1.Chop chocolate and melt, stirring the mixture.
2.Combine cardamom, coffee and cinnamon. Pour in 1/4 cup of boiling water, stir and put aside to cool.
3.Beat up yolks and 1/2 sugar until fluffy. Add melted chocolate and coffee and stir until smooth.
4.Whisk in heavy cream and remaining sugar until stiff peaks.
5.In another bowl, beat up egg whites until stiff peaks. Add a couple of tablespoons of whipped egg whites to the chocolate mixture and stir with a spatula. Continue adding egg whites while stirring the mixture.
6.Add whipped cream and stir gently. Divide the mousse between 6 bowls (cups or coffee cups). Cover with plastic wrap and refrigerate for at least 2 hours.
