Couscous Salad with Green Peas

Couscous salads are surprisingly tasty. This cereal absorbs the taste of the dressing very well, so the dish always turns out to be juicy and aromatic. You can serve it as a salad or main course.

Ingredients

1/2 cup couscous
2 cups frozen green peas
1 medium bunch of parsley
5 oz feta cheese
2/3 cup walnuts

For dressing:

1 medium bunch of basil
1/2 cup olive oil
1 shallot
2 cloves of garlic
1 tbsp honey
3 tbsp white wine vinegar
1 pinch of dried chili flakes
Salt to taste
Freshly ground black pepper to taste

Preparation

1.Pour couscous into a bowl. Add salt and pour in 1/2 cup of boiling water. Stir. Cover the bowl with a plate or lid and put aside for 10 minutes. Pick up couscous with a fork.

2.Cook green peas in boiling salted water for 5 minutes. Throw in a colander and rinse with cold water.

3.Chop parsley.

4.Chop walnuts.

5.Peel shallot and garlic for dressing. Tear basil leaves. Put all dressing ingredients in a blender bowl and blend until smooth. Season with salt and pepper.

6.Combine couscous, peas, parsley, and nuts in a bowl. Drizzle with 1/2 dressing and stir. Refrigerate for 2 hours.

7.Sprinkle the salad with crumbled feta and drizzle with the remaining dressing before serving.
