Couscous with Fried Vegetables and Shiitake

If you want to make your lunch more satisfying, cut cheese into thick slices, fry in oil and place next to couscous.


1 cup couscous
100 g shiitake
1 large red onion
1 bell pepper
1 medium zucchini or courgette
Olive oil
100 g frozen green peas
Salt to taste


1.Cook couscous in 1 cup of boiling water. Add salt and cover with a lid. Put aside for 5 minutes.

2.Cut shiitake caps into thick slices.

3.Peel onion. Cut onion, zucchini and bell peppers into small cubes.

4.Heat oil in a skillet. Fry vegetables (including peas) and mushrooms over high heat, stirring occasionally, until golden brown, 5 minutes.

5.Add couscous. Salt and pepper. Mix, heat for 1-2 minutes. Serve immediately.
