Our recipe for a New Year’s goose with fruit will certainly come in handy if you are expecting many guests for the New Year party.
2-3 sprigs of rosemary
1 sprig of parsley
3 tbsp honey
Soy sauce to taste
2 bay leaves
Salt to taste
Black pepper to taste
1.In a wide saucepan, bring to a boil 12 cups of water with salt, pepper, bay leaves, stems and roots. Immerse the goose in the water. Bring to a boil. Immediately remove and dry. Rub with salt and pepper. Bake in the oven preheated to 320° F (160° C) for 3 hours.
2.For a side dish, cut the citrus fruits into slices with the peel and place in a baking dish greased with goose fat. Drizzle with honey, goose fat, rosemary and salt.
3.Increase the oven temperature to 430° F(220° C). Place the fruit dish on the lower wire rack. Brush goose with honey and soy sauce. Return to the oven and bake for 10 minutes.
4.Add chopped figs to the fruits. Bake for 5 minutes. Serve goose with baked fruit.
