If salad is something of your go to meals, then you already know that adding a protein like chicken, makes your salad filling enough to count as the main course rather than a side dish. Grapes and grilled chicken are the brilliant match and let’s not forget about a rich herbed flavor from the thyme. And in less than 20 minutes, you get this healthy and satisfying meal on your table.
Ingredients
- 3 oz salad mix
- ¾ lb boneless skinless chicken breast
- 2 cups red grapes
- ½ cup walnuts
- ½ red sweet onion
- 1 ½ oz feta
- ½ tsp dried thyme
- 1 tbsp olive oil
- Salt
- Black pepper
For dressing
- 1/3 cup olive oil
- 2 ½ tbsp balsamic vinegar
- 1 tbsp honey
- 1 ½ tsp Dijon mustard
- 1 clove of garlic
- Salt
- Black pepper
Preparation
- Brush chicken with olive oil, sprinkle with thyme and season with salt and pepper.
- Preheat grill or grill pan to medium high. Brush with oil. Grill chicken 2–3 minutes per side. Remove from grill and set aside. Then cut into thin slices.
- Cut grapes into halves. Cut onion thin half rings, rinse in cold water and dry. Chop walnuts.
- For dressing, grind garlic and mix with the remaining dressing ingredients. Whisk before serving.
- Transfer all salad ingredients to a plate. Top with crushed feta and walnuts. Drizzle with dressing and serve.
