Vegetable Pancakes with Green Sauce

We all want an easy, healthy, tasty 15-minute meal idea for the entire family. These delicious vegetable pancakes are perfect for breakfast, lunch, or snack! These green veggie pancakes are one of the best use of a variety of vegetables that you’ve ever seen You can also use broccoli or cauliflower.


  • 2 large zucchini
  • 300 g pumpkin
  • 1 large potato
  • 1 medium onion
  • 3 cloves of garlic
  • 2 tbsp potato starch
  • Salt to taste
  • Black pepper to taste
  • Vegetable oil to taste

For the sauce

  • 100 g of a mixture of green onions, parsley and cilantro
  • 2 cloves of garlic
  • 1/2 lemon
  • Olive oil to taste


  1. For the sauce, finely chop greens and garlic. Transfer to a blender. Sprinkle with salt.
  2. Remove zest from lemon and squeeze the juice. Add to the blender along with 2 tablespoons of water. Blend until smooth, while adding oil. Add pepper.
  3. For pancakes, peel onion and garlic. Chop them finely. Peel pumpkin. Grate pulp of pumpkin, potatoes and zucchini. Combine with onion and garlic. Season with salt and pepper. Add starch and mix thoroughly.
  4. Heat oil in a pancake pan. Spread the vegetable dough with a big spoon. Fry over medium heat until golden brown on both sides. Serve hot topped with green sauce.
