Stracciatella, Strawberry and Tomato Toasts

Like with most Italian recipes, simplicity is foremost. Stracciatella is a mixture of mozzarella made with buffalo milk and cream. Its gentle and creamy taste combines perfectly with tomatoes and strawberries. If you can’t find Stracciatella, you are welcome to use any cream cheese.

Ingredients

  • 6 slices wheat bread
  • 3 medium tomatoes
  • 2 cups strawberry
  • a few twigs cilantro
  • Salt, pepper to taste
  • 14 oz Stracciatella

For orange sauce:

  • 1 big orange
  • 1/2 oz ginger
  • 1 lemon
  • Sugar, salt to taste
  • 1 tbsp starch

Preparation

  1. Cook orange sauce: squeeze juice from orange. Combine juice with sugar, salt and heat to 160° F (70-80° C). Add starch and stir until smooth. Add juice of ginger and lemon.
  2. Cut tomatoes and strawberries into small cubes and mix with the orange sauce. Add salt and pepper to taste.
  3. Cut bread into thin slices. Toast on a barbecue grill, a griddle or an oven toaster.
  4. Spread stracciatella cheese on toasts. Top with tomato-strawberry salad and decorate with cilantro twigs.
