Sweet Bread with Candied Fruit and Nuts

This homemade rich bread is packed with dried and candied fruit and nuts, and bathed in a sweet chocolate glaze. Feel free to eliminate the candied fruit and chocolate, and substitute any other dried fruit or nut.

Ingredients

  • ½  cup candied fruit
  • ½ cup Rum
  • ½ tsp grated nutmeg
  • ½ cup raisin
  • ½ cup almond
  • 1 ½ cup milk
  • ½ tbsp yeast
  • 2 cups flour
  • 10 tbsp butter
  • 1 ½ tsp salt
  • 2 eggs
  • ½ tsp ground ginger
  • 2 lemons
  • ½ tsp vanilla
  • 1 cup sugar
  • 1 cup milk chocolate.
  • Candied fruit and nuts for decoration

Preparation

  1. Combine candied fruit, rum, nutmeg, raisins and almonds and put aside for 12 hours.
  2. Combine 1 cup of milk, 2 tablespoons of  sugar and yeast and put aside for 1 hour.
  3. Add flour, ½ cup of milk, butter, salt, eggs, sugar, vanilla, ginger, lemon zest and nutmeg. Knead the dough.  Add rum mixture. Stir until smooth. Put aside the dough for at least 2 hours.
  4. Form a loaf and bake in the oven 380° F (180° C) for 40-60 minutes. Grease hot bread with soften butter. Cool bread.
  5. Melt milk chocolate and grease bread. Decorate with candied fruit or nuts.
