It is an Italian-inspired skillet chicken. Simple chicken thigh recipe cooked in white wine with tomatoes and ham. With fresh basil and white beans, this is a hearty family dinner.
- 8 chicken thighs
- 8 slices ham
- 800 g small tomatoes
- 1 can (400 g) cannellini beans
- 3/4 cup dry white wine
- 1 bunch basil
- Olive oil
- Ground black pepper
- Rub the chicken pieces with a mixture of salt and pepper. Place 2-3 basil leaves on each piece of chicken and wrap in a slice of ham. Place the chicken in a heat-resistant frying pan sprinkled with olive oil. Fry for 3-4 minutes from each side.
- Cut tomatoes in half. Tear the remaining basil leaves with hands. Add tomatoes and basil to the chicken. Pour in wine. Cover the frying pan with foil and bake at 320°F (160° C) for 40–45 minutes.
- Remove the foil. Add beans to the chicken and cook for another 20–30 minutes at 390°F (200°C).
- Serve immediately.
