This recipe for carrot muffins may be the easiest one bowl recipe in our cook book. Carrot muffins can become your favorite snack during the day. They aren’t too sweet but super moist. Walnuts, pecans, raisins and shredded coconut will definitely take these muffins to the next level, so feel free to add them to this recipe.
- 3 eggs
- ½ cup sugar
- 2 tsp vanilla sugar
- 100 ml oil
- 1 tbsp orange zest
- 6 oz fresh carrot (grated on a medium grater)
- 1 cup flour
- 2 tsp baking powder
- ½ tsp cinnamon
- 1/6 tsp nutmeg
- Preheat oven to 356° F( 180° C).
- In a large bowl, beat up sugar, eggs and vanilla sugar.
- Add the remaining ingredients. Knead the dough.
- Bake for 15-20 minutes.
