This omelet is quick and easy to make, but thanks to the kimchi sauce and coconut milk, it brings completely new, special taste.
1 1/2 tbsp kimchi sauce
3 tbsp coconut milk
1/3 tbsp greens
20 g cashew nuts
1 tsp sesame seeds
Salt to taste
1.Cut eggplant into cubes and grill.
2.Combine sauce, coconut milk, eggs and coarsely chopped herbs. Pour over eggplant. Salt. Cook in a frying pan.
3.Sprinkle with nuts and sesame seeds when serving.
