Pizza pie with chicken and cranberry sauce is almost a complete lunch. Boiled chicken, mashed potatoes, green beans with mushrooms and cheese can replace any second course. Cranberry sauce will be a pleasant bonus to such a hearty snack.
Ingredients
- 450 g pizza dough
- 3 tbsp olive oil
- 1/2 lb boiled chicken
- 1 cup mashed potato
- 2 1/2 oz grated parmesan
- 2 1/2 oz grated mozzarella
- 1 handful of green beans
- 1 handful of mushrooms
- 1 small red onion
- ½ tsp ground paprika
- Olive oil to taste
- Sea salt to taste
- Freshly ground black pepper to taste
For cranberry sauce:
- 1 cup cranberry jam
- ½ lemon
- ½ orange
- 2 clove
- 1 pinch of nutmeg
Preparation
- Combine freshly squeezed orange juice and 2 tablespoons of lemon juice, cloves and nutmeg. Bring to a boil and cook, stirring, for 2 minutes. Cool completely.
- Boil green beans for 3-4 minutes. Cut mushrooms into thin slices and lay on vegetable oil. Fry until the liquid evaporates.
- Put the baking sheet into the oven and preheat it to 480°F (250° C).
- Lubricate the work surface with olive oil. Divide the pizza dough into 6 pieces, slightly roll out and gently stretch it with your hands into 6 inch diameter circles. Brush the dough with olive oil. Transfer the dough to the baking sheet and bake for 7 minutes.
- Break chicken into small pieces. Combine with 5 tablespoons of cranberry sauce.
- Take out the dough from the oven and spread mashed potatoes on it. Sprinkle with salt and pepper.
- Top with 1/2 grated cheese.
- Spread beans, mushrooms, chicken and sauce and thinly chopped red onions. Sprinkle with the remaining grated cheese and paprika. Bake for 6-8 minutes until melted cheese. Serve warm.
