This salad can be served on the most festive table (or you can eat it alone with a glass of wine). Just find a ripe delicious avocado!
1lb beef tenderloin
2 large avocados
1 small bunch of cilantro
2 tbsp capers
1 clove of garlic
1/2 cup olive oil
1/2 tsp brown sugar
Salt to taste
Freshly ground black pepper to taste
1.Cut beef crosswise into 2 pieces. Season with salt and pepper from all sides. Wrap in parchment and put into the refrigerator for at least 60 minutes.
2.Rub meat with olive oil. Preheat a grill pan and sauté meat for 1 minute from each side. Transfer meat to a plate and put aside for 10-15 minutes.
3.In the meantime, prepare the dressing. Crush, peel and cut garlic. Finely chop cilantro.
4.Remove zest from one lime. Squeeze juice from 2 limes. Combine olive oil, garlic, cilantro, lime zest and juice, salt and pepper. Blend until smooth.
5.Peel and cut avocado into thin slices. Drizzle with dressing.
6.Fry meat in a grill pan for 30-40 seconds from each side. Slice thinly. Combine all ingredients. Sprinkle with capers and cilantro leaves. Serve immediately.
