Frittata is an Italian omelet prepared with all kinds of fillings: vegetables, meat, fish. Italians traditionally add hard cheese and leeks to frittata. Here is one more version of frittata, where we replaced leek with spinach.
Ingredients
6 large eggs
4oz grated hard cheese
4 slices of fatty bacon
1/3 cup fat heavy cream
2 medium potatoes
1 small bunch of spinac
2-3 cloves of garlic
2 sprigs of thyme
Salt to taste
Preparation
1.Preheat oven to 400° F(200° C).
2.Peel potatoes and cut into small slices.
3.Chop bacon. Fry bacon and potatoes in a skillet. Sprinkle with salt.
4.Chop garlic finely. Add thyme leaves, garlic and spinach to potatoes.
5.Whisk eggs, cream and salt until smooth.
6.Top vegetables in a skillet with cheese and pour in egg mixture. Place the skillet in the oven until cooked eggs, for 10-15 minutes.
